Healthy Blueberry Dumplings

Hello! I can't believe over a month has gone by since I wrote! Yeesh! Where does the time go?

Anyways, I wanted to share with you a delicious healthy breakfast...blueberry dumplings! I made them this weekend for Mike and I. They were a hit! I mean who doesn't love blueberries at breakfast?

I found the recipe in Shape Magazine's Ultimate Body Book, but healhtified it even more. Here's what you will need:


  • 3 cups fresh blueberries (frozen works too)
  • 1/2 cup water 
  • 4 tablespoons coconut sugar
  • 1 cup whole wheat flour
  • 1 teaspoon baking powder
  • 1/4 teaspoon salt
  • 3/4 cup almond milk (or other milk of your choice)
  • 1/2 cup egg whites
  • 1 cup nonfat greek yogurt
  • 1 teaspoon vanilla
In a large saucepan, combine blueberries, water, and 2 tablespoons coconut sugar. Set pan on high heat and bring to a boil; then reduce heat to medium and simmer 5 minutes.

In a medium bowl, whisk together flour, the rest of the coconut sugar, baking powder, and salt. In a small bowl, whisk together almond milk and egg whites, and then add to flower mixture; stir until combined.

Using a 1/2-cup measure, pour 4 heaping half-cups of batter into blueberry mixture to form dumplings (most of the batter will sink to the bottom). Cover pan and simmer 10 minutes without lifting the lid. Check dumplings for doneness (they should be firm and dry to the touch). If not done, replace lid and cook 5 minutes longer. Whisk the vanilla into the yogurt until light and fluffy! Spoon dumplings and blueberry mixture into shallow bowls and top each serving with 1/4 cup yogurt.

Serve and enjoy!!
